Hunting Tip 158
Every hunters knows the value in quickly field dressing game. Most think it is to open and cool the meat, and this is true, but it is also to drain as much blood from the animals system as possible. Blood breaks down in the muscles, turning into lactic acid and imparting a foul taste to the meat. The act of gutting severs enough major blood vessels to mostly drain the animal of trapped blood. Don’ t forget to field dress upland birds, waterfowl, small game, and especially wild turkeys, even if you only plan to breast them out when you get home, the difference in taste is remarkable
